Healthy bread? Yup…sweet potato flatbread!


Easy peasy!

If you want a sweet variation, choose 2 Tbsp of coconut flower and 1 tsp of cinnamon instead of the salt. These flavors go great together with yummy sweet potato.

Now…mix all ingredients in a bowl. (If it is too sticky, just add a little flower.) Make a ball of the dough and divide it into 5 little ones. Or however large you want your flatbread to turn out. Add some flower on your counter top and roll them flat. Or if you are a very talented pizza baker…swing them on your hand and throw them around in the air …I am not that I roll, that’s how I roll!

Heat (coconut) oil in a skillet. Then cook them 2 minutes on each side. Bubbles will show up. Pretty much like making a tortilla.

And they’re done! Cool little tip: if you have old (clean!) t shirts that you don’t use, cut them up in squares. You can use them to layer? store the flatbread. Shirt/bread/shirt/bread. You get the idea. That way your bread will stay moist.

Keep in airtight container in the fridge for up to 4 days.
